We just had a big family Christmas last week for Vic’s side of the family so I brought some pasta salad. In my past experiences pasta salad is a big hit! First off it’s super easy to make and secondly you can make a lot of it for big crowds. So I went with my Chicken Pasta Salad.
Easy Dinners for a Crowd
This is super easy I start by cooking my pasta according to the box directions. I used penne pasta but most kinds would work well. While the noodles were cooking I started on cutting up the veggies and fruit. I sliced the celery and quartered the grapes. For the tangerines I peeled them and cut the slices in half, so they were in chunks.
Chicken Pasta Salad
Ingredients
- 16 Oz Penne Pasta
- 2 Cans Canned Chicken
- 2 Cups Grapes Quartered
- 1 Cup Celery Sliced
- 4 Tangerines
Dressing
- 1 1/2 Cup Mayo
- 1/4 tsp onion powder
- 1 tsp Johnnys Seasoning
- Splash Lemon Juice
Instructions
- Cook Pasta according to package directions. Then drain and set aside.
- Chop your veggies and fruit accordingly.
- Combine pasta, chicken, grapes, celery and tangerines in a large bowl.
- In a separate bowl whisk together dressing ingredients. Then pour over pasta mix
- Serve
Chicken Pasta Salad
Now I drain the pasta and set aside for it to cool. Now for the sauce, you can really do any variation you would like. But I always use quite a bit of mayo and then pretty much any seasoning I like. But Johnnys seasoning is a good one. I also will use our black pepper salt. Mix your pasta with the fruit and veggies then add your sauce and mix that all together.
When I left the Christmas gathering I came home with an empty bowl! I was sort of hoping for some leftovers to snack on the next day. But that is my kind of dish easy and quick. And when you make a big batch it can feed a big crowd.
