Why Its Called Blueberry Buckle

Word has it that Blueberry Buckle is allegedly called “buckle” because while it bakes the batter rises, but the berries and crumb topping weigh it down. This causes the surface of the cake to buckle.

The Difference between a Blueberry Cobbler and a Blueberry Buckle

A Cobbler is often made in a deep dish and topped with ingredients that resemble a batter, then baked. The topping is usually dropped or spooned on the fruit layer and is often not very sweet. A cobbler is a little more syrupy and moist than a buckle and needs to be eaten within a day or refrigerated. Though crumbles, crisps, and cobblers are more akin to pie, a buckle is a lot like cake. In fact, they look nearly identical to fruit-filled coffee cakes. As the batter rises in the oven, the weight of the fruit causes it to “buckle.”

  • 1 Stand Mixer
  • 1 9×13-inch pan

Ingredients
  

Batter

  • 1-3/4 cup flour
  • 3/4 cup sugar
  • 2-1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 egg
  • 1-1/2 cup milk
  • 1/4 c crisco
  • 2 cup blueberries fresh or frozen

Streusel

  • 1/2 cup sugar
  • 1/3 cup flour
  • 3/4 tsp cinnamon
  • 1/4 cup margarine or butter

Glaze

  • 1 cup powdered sugar
  • 1 tsp margarine or butter
  • 1 tsp vanille bean paste
  • hot water

Instructions
 

  • Sift together flour, sugar, baking powder and salt.
  • Stir together with egg, milk and crisco.
  • Add blueberries.
  • Spread batter in greased 9×13-inch pan.
  • Combine sugar, flour, cinnamon and butter for streusel topping.
  • Sprinkle over batter.
  • Bake at 350 for 30 to 40 minutes.
  • Drizzle with glaze.
  • Serve warm.
