Ty and Claire have been building, so in the evenings sometimes Vic will go over and help with the house. One evening I tagged along and brought these cookies for everyone! They were a hit! The whole bag was gone within a few minutes. I also brought them over for some of the neighbors to have a treat.

Toffee Chocolate Chip Cookie Recipe

Delicious easy cookies everyone will love.
Cook Time 15 minutes
Course Dessert
Cuisine American

Ingredients
  

  • 1 Cup Butter Softened
  • 1 Cup Brown Sugar Packed
  • 1 Cup Granulated Sugar
  • 2 Eggs
  • 2 tsp Vanilla Bean Paste
  • 1 tsp Baking Soda
  • 1 tsp Salt
  • 3 Cups Flour
  • 1/2 Package Chocolate Chips
  • 1/2 Package Heath Toffee Bits

Instructions
 

  • Preheat oven to 350F
  • Mix the softened butter for about a minute until fluffy. Add in the brown sugar and granulated sugar. Mix for 3 minutes.
  • Add in the eggs and vanilla, mix.
  • Mix in the flour, baking soda, and salt.
  • Fold in the chocolate chips and Heath bits.
  • I do about tablespoon size balls and bake for 10-12 minutes.

These are soft and chewy cookies. But the toffee gives it this perfect caramel crunch. For the toffee bits I use the Heath toffee bits. These are even better if you can refrigerate the dough for a few hours and then bake. Usually I am a little too impatient and want cookies right away!
