Vic’s Homemade Meatloaf is a good one! It’s super easy and it can feed a lot of people too. Which is great for a big families like ours. Lots of times the kids and grandkids will be over so we need something quick and something that will feed us all.
We used our homegrown beef from last year. It is some of the leanest meat we have ever had. This seriously only has a handful of ingredients, which is perfect! What really makes this yummy is the Chicken Shit Seasoning. Yes I know..but that’s really the name. It’s so good!
Vic’s Homemade Meatloaf
Vic’s Meatloaf
Ingredients
- 2 lbs Ground Beef
- 3 Eggs
- 1 Sweet Onion Diced
- 1/2 Package Bacon Diced
- 2 Tbsp Chicken Shit Seasoning
- 1 tsp Salt and Pepper Blend
Instructions
- Preheat oven to 425F
- Sauté onion and raw bacon in garlic infused olive oil till golden brown. Turn off burner then add seasoning, eggs and ground beef. Mix very well.
- Cook about 40 minutes.
Vic actually sautés the onions first in the cast iron, just so they’re not crunchy when we go to eat it. Then he adds in the bacon to cook, so it gets a nice crunch. Next is the rest of the ingredients. Mix them all together and add to your preheated oven. Easy as that!
I love meatloaf with ketchup. One of my best sides with meatloaf is potatoes. Especially mashed potatoes! Vic’s Homemade Meatloaf is so delicious!
