Blueberry Buckle

  • 1 Stand Mixer
  • 1 9x13-inch pan

Ingredients
  

Batter

  • 1-3/4 cup flour
  • 3/4 cup sugar
  • 2-1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 egg
  • 1-1/2 cup milk
  • 1/4 c crisco
  • 2 cup blueberries fresh or frozen

Streusel

  • 1/2 cup sugar
  • 1/3 cup flour
  • 3/4 tsp cinnamon
  • 1/4 cup margarine or butter

Glaze

  • 1 cup powdered sugar
  • 1 tsp margarine or butter
  • 1 tsp vanille bean paste
  • hot water

Instructions
 

  • Sift together flour, sugar, baking powder and salt.
  • Stir together with egg, milk and crisco.
  • Add blueberries.
  • Spread batter in greased 9x13-inch pan.
  • Combine sugar, flour, cinnamon and butter for streusel topping.
  • Sprinkle over batter.
  • Bake at 350 for 30 to 40 minutes.
  • Drizzle with glaze.
  • Serve warm.
