Delicious Easy Homemade Pizza Pockets

Equipment

  • 1 Stand Mixer
  • 1 cutting board
  • 1 baking sheet

Ingredients
  

Pizza Pocket Dough

  • 1 cup warm water 120 degrees
  • 1 tbsp sugar
  • 2-1/2 tsp yeast
  • 2 tbsp olive oil
  • 2 tsp salt
  • 3 cups flour

Filling

  • 10 string cheese sticks
  • 50 pieces of pepperoni

Topping

  • 1/4 cup butter melted
  • 1/2 tsp garlic salt
  • 1-1/2 tsp parsley
  • 2 tbsp grated parmesan cheese

Instructions
 

Make Dough

  • Place warm water, sugar, and yeast in mixer bowl. Let sit 3 minutes
  • Add oil, salt, and flour. Let mixer run for 5 minutes.

Make Pockets

  • Turn dough onto a cutting board and divide into ten even pieces. Pat each dough piece into a 4" x 7" rectangle. Place one cheese stick and five pepperonis in each dough and fold over. Carefully pinch closed so no cheese can leak out.
  • Place all pockets on a sprayed baking sheet. Brush on melted butter and sprinkle with garlic salt, parsley, and cheese.
  • Bake 450 for 15 minutes (the baking time given is for a light colored pan, they will be done sooner if using a dark pan.)

Notes

Use any filling you want. Lissa put in 2 tbsp of ground sausage.
Heat your favorite marinara sauce for dipping.
These make great leftovers so we tend to make a double batch.
